I love Lasagna just as much as the next person, but lets be honest making Lasagna the right way can be a very tedious task and it can be extremely time consuming. So what do you do when you love Lasagna but don’t have time to make it to perfection? You make a Lasagna alternative of course! These Spinach Lasagna Roll Ups are absolutely delicious and they are a lot quicker to make than the traditional Lasagna. And better yet these are meatless and the spinach makes them fairly healthy lol! (No worries though, you can brown up some meat and add it in if you’d like.) 

Spinach Lasagna Rolls

Whatcha Need:

10-12 Lasagna Noodles

16oz Ricotta

10 oz. Frozen Spinach (thawed and drained.)

1-cup mozzarella

1 cup Parmesan (More for topping)

1 egg


3 tbs Extra Virgin Olive Oil

28 oz. (1 can) crushed tomatoes

1 shallot

2 Tbs. Minced Garlic

Italian Seasoning




Whatcha Do:

1.) Preheat oven to 350.

2.) In a large pot, boil water and add a pinch of salt and a generous amount of oil. (I prefer EVOO). Add in your lasagna noodles and boil until soft, about 10-15 minutes. Once your noodles are cooked pour them into a strainer and let cool for about 20 minutes. If you don’t let them cool they will be too hot to warm ad you risk burning your hand and tearing the noodle.


3.) In a medium saucepan or skillet warm up your extra virgin olive oil and add your can of crushed tomatoes. Add in your chopped shallot, minced garlic and seasonings (Italian, Thyme, Basil, Parsley) about 1 tsp. of each. Add a pinch or salt and pepper to taste. Heat until warm, stirring occasionally and then let it simmer.


4.) In a large mixing bowl, place your ricotta, mozzarella, Parmesan, egg, drained spinach. Season with a little salt and pepper; mix with an electric mixer until all ingredients are thoroughly blended.

5.) Lay out your cooled lasagna noodles on a flat surface (I use my cutting board). Take a spoon to scoop out you filling mixture and spread it on your lasagna noodle leaving a little space at the end of each noodle.

6.) Starting at an end of the noodle roll the noodle to the opposite in. Place rolled noodles in lightly greased glass baking dish. Repeat until mixture is gone.

7.) Top rolled lasagna noodles with your sauce. Bake on 350 for 35-30 minutes.

8.) Take your lasagna noodles out of the oven and sprinkle with extra Parmesan. Serve immediately.

SN: If you don’t want to make your own sauce for the topping you can buy marinara sauce from the store.

Also you can properly freeze any leftovers and reheat them up to two months!
